Barcelona is full of cafes. In recent years many franchises have been set up, standardising what you can find. Fortunately, independent cafes continue to flourish, with new cafes always opening. Some more interesting options are listed below:

Very close to the top of Las Ramblas in Plaza Bonsucces - a good place to escape the crowds during the day or early evening.
Buenas Migas
Plaza Vincenc Martorell /Bonsucces (M- Catalunya)/Catedral (M- Jaume I) & Mayor de Gracia (M-Diagonal)
Buenas Migas offers health concious food - vegetarian pies, calzones, salads, carrot cake and the like. More importantly, they've managed to create an atmosphere - and building on their success now operate from 3 different sites in the city.
El café de la opera - La Rambla (Metro Liceo)
This café is a classic, where you can sit and take in the atmosphere for hours.

Café Fundacio Mares
Open in the summer months, this café is tucked away in a little square that adjoins the Fundacion Mares, just near the Cathedral.
Museu Textil café
Opposite the Picasso Museum is the Textile Museum. It has a café in the courtyard and serves lunch and dinner.
